Recipe: Millionaire's Shortbread

You all wanted the recipe so here it is. These are surprisingly easy to make, although it does take a long time as you need to allow it to set. There aren't many pictures as I wasn't planning on doing this post as I didn't think it would be popular. Sorry for the bad quality too - it was taken quickly.



Ingredients
For the base:
3oz/75g plain flour
2oz/50g unsalted butter
1oz/25g caster sugar
For the caramel:
14oz/397g condensed milk (there is a tin this exact size)
2oz/50g unsalted butter
2oz/50g caster sugar
For the top:
8oz chocolate (I used Dairy Milk but you can use whatever you want, you can even use two types)

1. Grease a 7 inch square loose tin (silicone worked a treat as it was so easy to get out without breaking the shortbread).
2. Mix the flour and butter until it resembles breadcrumbs, then add the sugar and mix until it is like dough.
3. Press the mixture into the tin and make it an even layer. Bake in a preheated oven 180C/350F/Gas Mark 4, for 20 minutes (or pale golden). Leave to cool.
4. For the caramel, put the condensed milk, butter and sugar into a saucepan and heat gently until the sugar dissolves. Bring to the boil, then reduce the heat and simmer very gently until the mixture becomes thick and pale golden. Pour over the shortbread and leave to set for 2-3 hours.
5. Melt the chocolate and pour over the caramel. Leave to set and cut into squares.
6. Enjoy!

  7. my mammy used to make this when i was little :) its also yummy if you dont use chocolate but cover the carmel in chocolate hundreds and thousands! xxx
